Vegan Cinnamon Rolls

These must-try cinnamon rolls come from  Northern Europe. In Sweden it is called kanelbulle. It-s made with a rolled sheet of yeast-leavened dough, a mixture of butter, sugar, and cinnamon powder in the middle. 

Cinnamon rolls are available in snail type and curled flower type. The materials and methods are the same, but the method is different when shaping.

Ingredients

Cinnamon roll dough

  • Bread flour 340g
  • Brown sugar 25g
  • Salt 0.5g
  • Fresh yeast 10g
  • E.V.O.O 20g
  • Warm Oat Milk 180g

Cinnamon roll filling:

  • Softened vegan butter 50g
  • Cinnamon powder 7g
  • Brown sugar 60g

Instructions

    1. Cut 10g of fresh yeast into a glass, add half of the sugar to the yeast, and half of the warm oat milk.
    2. Mix well, set aside for 10min. to activate the yeast.
    3. Mix all with a spoon, and rub evenly until there is no dry flour.
    4. Cover well the dough and let it stand for 20 minutes.
    5. Knead until dough becomes smooth and elastic (10-12 minutes).
    6. Please refer to the gestures demonstrated in the video.
    7. Cover well the dough and let it stand for 30 min. for fermentation.
    8. Put into a bowl 50g of softened vegan Rub and press a bit the dough to get rid of the air. butter,60g of brown sugar,7g of cinnamon powder. Mix well and set aside for later.
    9. Rub and press a bit the dough to get rid of the air.
    10. Sprinkle flour on the tabletop. Roll out into a square, about 0.5cm thick.
    11. Coat the dough with a thin layer of filling. Fold in half into a rectangle, cut the dough into 10 strips about 3 cm wide.
    12. Take a strip and cut it into a ¨V¨ shape. The two lines cross into a screw shape. Make a few turns and insert the tail into the small hole in the middle to form a flower shape.
    13. Seal well and let stand for about 40 minutes.
    14. Preheat the oven for 20 minutes, up and down, 170ºC.
    15. Bake for 20-25 minutes, upper and lower heat, 170ºC. Take out.
    16. Coat with sugar water and sprinkle some chopped almonds,
    17. Bake for 1 minute, upper and lower heat, 170ºC.
