Mommy’s Cooking Healthy is an inspirational work brought about Alicia’s transition to a Vegan lifestyle on September 12, 2017. After conducting her own personal research into how our bodies react to certain foods, she immediately knew she needed to change her eating habits for herself as well as her family. As a mother, she creates healthy yet soulful vegan meals to better her family’s health, stop animal cruelty and improve the planet.

My name is Alicia Alexandria Johnson, born in New Iberia, LA.
As the eldest of 5 siblings, I was raised in Baton Rouge, LA. I was taught how to value the importance of her Faith, her Family and her Compassion. During my adolescent years were a struggle due to my personal insecurities. I endured the stress of childhood obesity, bullies and very low self esteem. However, I never gave up on myself. I studied Mathematics at Southeastern Louisiana University in Hammond, LA.
This is when I discovered the beauty contained within myself and my spirit of compassion towards others. I developed a genuine love for encouraging and inspiring others. I began to pay more attention to my personal health by making better food choices and exercising daily. My self love restored rapidly.
In 2015, I gave birth to my son. My top priority was to ensure that he would be healthy. He was born with a severe case of eczema. My extensive research led to the realization that one of the most common sources of illnesses, irritations and disorders, is the chemicals in foods. September 2017, I have not only improved the life of myself and my son, but I have been an inspiration to countless others that can all attest to the amazing benefits I have to offer humanity. As I found my passion and purpose in life, I have dedicated my life to helping as many others as possible to do the same.
In 2018, I published my cookbook, Mommy’s Cooking Healthy. It is available on amazon, at Walmart, Barnes & Noble and Target. As a mother, I create healthy yet soulful vegan meals to better my family’s health, stop animal cruelty and improve the planet. This cookbook has vegetarian and vegan meals for those who are seeking to slowly transition into veganism. I am currently working on a cookbook for a Plant-based, alkaline lifestyle.
Although I support all vegan restaurants to try, there is nothing like experimenting with plants at home. Home cooked meals are not only more affordable but they are healthier. I recommend families to make their own plant milks using almonds, hemp seeds or walnuts and Non dairy cheeses can be make from cashews. This is to assure your eating habits include all natural ingredients and less processed foods.
If you are a beginner, go at your own pace. This is not a competition nor is it a race. Do not compare your journey with no one else. My advice to beginners is to make a list of your favorite meals then break down the ingredients. For each ingredient, swap the meat for a meat substitute such as jackfruit, walnuts, mushrooms or hearts of palm and swap the dairy for non dairy products.
Cook your plant substitutes just like you would the meat. Another important thing is to read your labels. My motto is if you can not pronounce the word and if can not grow it yourself, then that ingredient is a chemical that you do not need in your body. There is a misconception that vegans lack protein. That myth is false. There are plant based protein powders for smoothies, vegetables and legumes all have plenty of protein. Be sure to take a multi vitamin and B12 supplements or juice the fruits and vegetables that are rich in B12.
Food is directly related to our heath and plays a major role in our lives. It is very important that you pay close attention to what you allow into your Temple as well as passing this knowledge down to your children. Certain foods and chemicals will definitely weaken their immune system, cause skin problems and deteriorate brain cells. These issues could lead to an early death, comprehensive delays and horrible behavior. I am from Louisiana where the iconic foods are red beans, gumbo, jambalaya, cajun po boys and seafood.
Transitioning to a vegan lifestyle does not eliminate the Cajun flavors. Mommy’s Cooking Healthy recipes are fulfilled with the same Cajun style flavors minus the processed meats and dairy.
