Susan is a Food Content Creator. She shares unstintingly her crazy food ideas on her IG @kitchenpedals. Meatless Movement recently had a conversation with her to find out how she turns her inspirations to recipes.

My name is Susan. I have 2 little boys. I work in a corporate job during the day. I was born in Australia, am of Lebanese origin, and have lived in New York for the past 10 years.

I’m more of a vegan in the making at this point in my life. My journey started with eliminating dairy from my diet 3 years ago. In fact, it was more for medical reasons. My babies were allergic to the cow protein in my milk and so for me to continue to breastfeed I had to cut out dairy.

Cutting out dairy taught me so much about plant-based foods. I was surprised with how easily replaceable animal food products are, in our foods, something I had never imaged prior, coming from a Middle Eastern background where dairy products and meats are a part of almost every dish! I’m currently experimenting with meat replacement, and am amazed by the delicious and fulfilling alternatives our planet has to offer.

Vegan food is pretty available in NYC, whether in grocery stores, cafes or restaurants. Smart places have introduced plant-based options to their menus. With most of us having spent the past year and a half at home, it’s been quite easy to decide what to eat and to be more conscious about what products we buy and introduce into our bodies.

I think most people in large cities are more aware about plant-based diets and are considerate of dietary choices/preferences. I learned more about vegetarian and vegan diets through friends and colleagues. I do however believe there’s a lot of work to be done to spread the word further. What Meatless Movement is doing is brilliant, in sharing real people’s stories and food creations.

Like I mentioned earlier, I’m not 100% there yet, but working on it. I admit a plant-based diet flushes out toxins from your body and fuels you with more energy. I have certainly felt that way, but more importantly there’s a TON of research out there that breaks it down for you. Imagine all the nutrition that’s packed in fruits, vegetables, seeds, legumes and nuts and the effect mixing it all together has!

How do you persuade a meat-eater to go meatless for a day?

If more people could see what incredible foods you could create using plant-based products only, they’d come flocking.

I’d suggest they check out all the amazing vegan or vegetarian foods recipe creators and bloggers write about. Perhaps show them a photo or two of an extremely scrumptious energy packed plant-based meal and see how they react to that. The educational aspect of it, tying it to science and the environment is extremely important, and we all have a responsibility towards all creations and our planet, but in reality, not everyone is willing to learn or do something about that. I think starting off by showing some amazing creations and meat-alternatives followed by the science might be more impactful to some.

I’m currently into the homemade foods. I like being in control of what ingredients to use. Additionally, my food usually matches my mood for the day.

I decided to start my Instagram food blog about 6 months ago, being an avid baker and lover of breakfast bowls and smoothies. A good 90% of the food on my blog is vegan in an effort to become one and to encourage others to try out plant-based foods. My idea for my blog is good food that also looks good. I personally can’t develop an appetite if the food doesn’t look appetizing. I hope some folks try out some of the recipes I share, some of which leverage other people’s amazing work (I always give credits) and others of which I create myself.
