Echoe discovered her passion for cooking at the age of 10, quickly becoming the designated household chef, particularly renowned for her mastery of Bolognese cuisine. Excelling in Food Technology during high school, she honed her skills further by working in various culinary roles, including at the prestigious 5-star Ana Harbour Grand Hotel in Sydney. Despite facing challenges associated with autism, Echoe’s unwavering dedication to her culinary interests led her to pursue self-study in nutrition for over 25 years, culminating in a certification as a Nutritionist.

Born in Amsterdam and raised in Sydney, Echoe’s culinary journey has taken her across the globe, from living in Japan to immersing herself in diverse cuisines while residing in the UK. Drawing inspiration from her travels, Echoe’s approach to cooking is a vibrant fusion of flavors, influenced by the authentic dishes she learned from families of various cultural backgrounds. I (Echoe) became vegan after being vegetarian from the age of 16-20, having read a book on slaughterhouses. Then falling back into eating meat having an Africa partner who expected me to cook meat for them. Then 6years ago saw some videos of live footage & that was it. Haydn & I stared seeing eachother October 2021 & he moved in pretty quickly & I told him I didn’t tolerate any animal abuse in my house ie: Meat, dairy etc I am a good cook & eventually he stopped eating meat out etc & was already lactose intolerant.

How to Encourage Non-Vegans to Try Meatless Food?

If you haven’t killed an animal yourself then how can you simply pay someone to do it. Meat / Seafood, Eggs & Dairy can contain:

  • Puss
  • Cancerous / Benign Tumours
  • Parasites • Pathogens
  • Dyes
  • Mercury & other metals
  • PCB dioxins

And are the largest causes of inflammation (yes even fish oil) in the body, not to mention the biggest causes for diabetes, cancer & the biggest killer – heart disease.

People think that calcium only come from milk & that you need it for your bones but even doctors don’t give into the pharmaceutical companies money when it comes to osteoporosis & tell you not to drink it! Because there are studies that actually indicate that the calcium is not so bioavailable (there but doesn’t absorbs into your body), can actually leach (remove) calcium from your bones & make them brittle AND is highly inflammatory, most will notice mucus build up & problems with arthritis lessen or disappear when you remove dairy!

Common Challenges in Discovering Vegan Food Options

We still find that we get caught out with very small writing in bold of ‘fsh’ or thinking that crisps will be ‘beef flavoured’ not actually have beef.

We hate that whey powder (a bi-product of cheese) is in everything & has casein so it makes it more addictive & they sell it cheap so they stick it in stupid things like Pringles, crisps even salads, soups & juice etc.. It’s hard not to miss things you used to eat that you were accustomed to like prawn toast, tuna sandwiches, creamy muscles linguini etc but it’s a small price to pay when you think about the pain all those creatures experience & that your taste buds are not where near as important as their lives, family & social networks etc.

The thing I hate most about society would be that cognitive dissonance is so ingrained in people that they attacks US for their violence, as if they project their subconscious guilt.

I don’t shame people but I do point out the suffering they inflict & my children my empathy & compassion for the animals they openly eat, abuse / use etc.

If it were an innocent child would we not have a moral obligation to stand up to it? Like slavery, just because it was /still is seen as ‘normal’ or even ‘right’ by society, the FDA & government etc doesn’t mean it is right.

We live pets like cats & dogs in western society yet to things, horrible things to any other animal, things we would never inflect on our pets we call ‘family’ yet they are worthy of love just the same.

Sea creatures have it the worst, because they come for a ‘water world’ that we cannot relate to, because they cannot scream for help or in pain & because they do not cry or have facial expressions like us, unlike many land animals.

This is a big reason why they are mass slaughtered by the trillions compared to billions of land animals.

Eating out with friends can be hard when it is my birthday as I will choose vegan /vegetarian places with mainly vegan food & some friends have restrictive eating habits & feel odd if there is no meat in a meal. This is something I am unapologetic for & often they will eat McDonald’s before coming out with us & sometimes barely touch food.

Same with when they stay over, they would leave food aside & eat things but comment on how it doesn’t taste like bacon etc etc They don’t have the conviction of it & even though my food is yummy & many other more open minded people will enjoy it & even at times say you don’t even notice the difference or that there is no meat etc.

Some struggle with it but are often so lacking in self-awareness that they don’t know why they are so indoctrinated to eat animals or bi-products on the first place. This one particular person I speak of is pre-diabetic with considerable visceral fat.

And doesn’t get enough protein on a non-vegan diet, mainly eating white bread, tea, biscuits, chocolate & low quality meat products etc.

How do you feel about being a vegan?

I don’t need to justify my choice to not harm animals & if people can’t respect my inability to hurt them then they are being as rude & disrespectful of my belief as eating pork in front of a muslim, cow in front of someone who is hindi etc

It is not a religion but it is a way of life & it is a moral compass

Eggs kill male chicks. They drain chickens of calcium that they need to eat to replenish themselves as they have been bred to overproduce eggs, like humans they are only meant to have 1 period every month or so. Also eggs are still part of the chicken meat industry as much as a dairy cow is to the beef industry.

Dairy kills male calves and both enslave females into being baby / ovarian egg makers for the profit of companies in an unprecedented capacity that the world has never seen before. Back in the 50’s people would have a roast chicken that would last almost the entire week. Fry-ups were not every other day & they certainly did not have animals in every single meal! These days we eat an animal/s breakfast, lunch, dinner & biproducts for snacks! Around 174 animals each a year!

Dairy a cow’s babies breast milk & if a human sucked on a cow it would be very odd, no other animal really drinks another species milk, not unless desperate & out of necessity but after the wheezing age, no mammal needs breast milk! Eggs are chicken periods coming out of a chickens vagina, sometimes covered in blood as they have prolapses from over producing eggs.

Backyard hens are still bred from human selective breeding methods where they try to get them to be bigger & bigger as like dairy cows they are often killed for meat when they are too tired to keep pushing out eggs or in the case of a cow, no longer able to keep carrying babies to term for 9 months, then having them ripped away & either killed (males) or also enslaved just so that humans can drink their babies milk.

How would you tell someone who’s not yet vegan to try meatless food?

Also the amount of soy vegans each is near to only 1% of what is harvested, 85-90% is for livestock! 5-10% for biofuel! So many people think that vegans still have a large Co2 footprint but they really don’t & those who are vegan for the environment in particular are likely to also look for locally sourced produce. Cows need up to 155Litres of water a day for around 5years (that right all livestock that are killed are mere babies!) tofu, beans etc use much less & create less Co2 gas emissions of methane etc as they don’t have feces etc.
