In our last interview with Verito, we discussed how veganism is about doing our best — it’s not about perfection, but rather a process, not a competition. Veronica is a down-to-earth, fun-loving person who has always had a passion for cooking, especially when it comes to trying new and unique flavors. Years ago, she doubted whether anyone would be interested in her food because it wasn’t the most conventional. However, when she started using TikTok, she was amazed to find thousands of people intrigued by her creations.

In this recent conversation, Veronica shared her love for teaching others to embrace the kitchen as a fun and creative space where anyone can experiment and create delicious meals. Today, we speak with her again, reflecting on her ongoing journey.

Reflecting on Your Continued Journey:

Today, I walk more slowly, but my heart is full of love. I am happy, I live with gratitude, and tomorrow I’ll get back to my rhythm

Since our last conversation, my vegan journey has deepened in ways that are both challenging and
fulfilling. Every day, I feel happier and more confident in who I am, with veganism as an inseparable part of my life. I’ve found ways to share veganism leading by a loving and kind example.

I’ve seen friends, family, and even followers inspired to make more mindful, meatless choices, which has been incredibly rewarding.

A significant milestone for me has been witnessing my community transform their lives through veganism and my recipes. Recently, I received a message from a follower whose husband had been waiting for a kidney transplant and didn’t enjoy eating vegetables.

Through my videos, she found new ways to cook plant-based meals, and after a few months of eating this way, they returned to the doctor to find his kidney was actually recovering. Now, he no longer needs a
transplant. Stories like these remind me of the power of plant-based choices and the ripple effect they can have on health and well-being. We not only help the animals we help ourselves.

Living a meatless lifestyle has also brought unexpected rewards, I feel healthier, more energized, and more at peace knowing I’m contributing to a better planet. This sense of purpose keeps me motivated, and I’m excited to see where the journey takes me next.

Challenges:

Life teaches us to value the simple things, to find happiness in every second, and to live with gratitude for each day

The biggest challenges I face as a vegan tend to come from outside, not within myself. Veganism is
the only way I see myself living—it feels natural and fulfilling. The obstacles often arise from the reactions of others, whether it’s facing criticism, occasional bullying from meat eaters, or even differing opinions from some doctors. While most medical professionals agree that I’m thriving on a plant-based diet, there are those who still insist that I “need” meat to be healthy.

One of the biggest challenges has been standing confidently in my beliefs, regardless of others’ opinions. I’ve learned to focus on the positive impact of my choices and to share veganism in a way that’s kind and compassionate, hoping to inspire rather than convince. Knowing I’m healthy, happy, and living true to my values is what keeps me motivated. For anyone facing similar obstacles, I’d say: trust yourself, stay rooted in what you believe, and let your actions speak louder than words.

Lately, I’ve had some fun culinary adventures creating unique, flavorful recipes. One of my favorites is a vegan nacho cheese that I developed using a tofu base. It has a rich, creamy texture and the perfect savory taste, and it’s been a hit with my friends, family and TikTok.

My cooking has always been simple and practical; I love working with ingredients that we already have at home, making vegan cooking accessible for everyone.

I’ve also been experimenting with “agua fresca,” a staple in Mexican cuisine. Surprisingly, I discovered that banana is an incredible ingredient for it! It adds a natural tangy sweetness and smooth texture, making each sip refreshing and satisfying. These recipes have reminded me of how veganism can be both nourishing and exciting, and I can’t wait to keep exploring.

To keep my meals creative and enjoyable, I focus on making them as colorful as possible and vary the ingredients I buy to explore different flavors. Eating a rainbow of fruits and vegetables makes each meal visually appealing and nutritionally balanced. I also experiment with seasonal produce, which keeps things fresh and exciting. This approach helps me stay enthusiastic about plant-based eating, as there’s always something new to try and enjoy!

Advocacy and Education:

My approach to advocating for a plant-based lifestyle is always rooted in kindness and leading by example. I never try to tell others what is right or wrong; instead, I focus on showing the positive changes I’ve experienced, like better energy and a happier mood, since adopting veganism. I’ve found that living in a way that reflects my values naturally inspires curiosity in others. For anyone looking to communicate effectively, my advice is to share your journey with love and patience.

Sometimes, just being a compassionate example is the most powerful way to spark interest and inspire change.

Balancing Passion and Compassion:

In social settings, I aim to keep things easygoing and positive. I don’t bring up my dietary preferences as “special needs”; instead, I just enjoy whatever options are available, even if it’s as simple as a side dish or fries. For me, the focus is on the company and the shared experience.

When I’m invited somewhere and it feels appropriate, I like to bring a vegan dish to share. It’s a great way to introduce others to plant-based food, and I’ve found that people are often excited to try something new, even if they’re not considering going vegan. For me, it’s all about attitude—there’s always an option, and I make the most of it with gratitude.

A Vision for the Future:

I see the meatless community growing every day, with more acceptance from non-vegans and an
increasing number of people choosing vegan and cruelty-free options. As demand for these products rises, I envision vegans and non-vegans alike working together to create new, innovative products that make a plant-based lifestyle accessible and appealing to everyone.

My role in this movement is to keep sharing my food, experiences, and the joy that comes with a meatless life. I hope to be a safe, welcoming space where non-vegans feel comfortable asking questions and exploring their curiosity—that openness can often be the beginning of their own journey toward change.
