Los Bowls was technically born in 2019 by three good hospitality friends that met in Miami 10 years ago, all with a passion of Mexican cooking and healthy eating inspiring Los Bowls de Guadalupe to be what it is today. Meatless Movement recently had the chance to chat with one of the founders, Alexandra.
Alexandra told Meatless Movement that Los Bowls de Guadalupe is the latest restaurant concept to join the plant-based revolution in the magical seaside town of Tulum. Known for its bohemian vibes and feel good energy, Tulum has become a major destination for those seeking to disconnect, escape, and reconnect.

Los Bowls was born in 2019 by three close hospitality friends that met in Miami 10 years before. We all had a passion for Mexican cooking and culture as well as leading lives where health and wellness was essential. These are the components that led Los Bowls de Guadalupe to be what it is today.
We want Los Bowls de Guadalupe to radiate the sunny vibes of this peninsula. We hope you come grab a bowl, make a friend, and truly feel like today is a good day! Letting the food nurture you from the inside and glow on the outside.
Our concept is focused on local Yucatecan ingredients and superfoods. The tropical climate allows for a variety of exotic fruits and veggies that are beneficial to the body and taste delicious. Guadalupe is the mother of all Mexicans . She nurtures from the ground up and provides countless ingredients to sustain your well being. Our bowls are made with ingredients like Chaya (the miraculous Mayan spinach), plantains, healthy grains and our delicious vegan sauces are made with a cashew base.
Los Bowls de Guadalupe is a fast-casual, beachside plant based restaurant with an emphasis on quality local ingredients. We serve smoothies and bowls made from a variety of tropical fruits and vegetables. Each bowl is built with a combination of vegan ingredients, the majority of which are local and seasonally based. The concept is to give guests a wholesome, filling, and delicious meal at an affordable price, in a beautiful setting.
There is an exciting shift happening with consciousness and we wanted to be a part of it. Respect for the environment, respect for animals, mindful consumption, and whole body wellness are all part of the shift. Also, by being vegan/vegetarian it allows us to work closely with many of the local farmers and vendors. We compost all of our organic matter and recycle everything as well as we refill all of our detergent and cleaning products becoming a zero waste restaurant.
We know we are not perfect but we try to do our best and contribute to this world that provides us with so much.
A cute guy came to the restaurant and said he was new in town and asked me if I knew where a good spot to go kitesurfing was, we exchanged numbers and 6 months later I was married and now a year later we are about to have a baby.
When we were in the opening phase of the restaurant we didn’t have a car, only a scooter. But there were so many things that needed to be done! Everything that we would purchase for the restaurant had to be transported on a scooter. Sinks, Instapots, stoves, chairs, wood to build tables, mini fridges… Everything on a scooter with one person driving and the other person trying to hold on to everything!
We were working at an art convention center called “Art Basel” at the Miami location and we were in charge of bringing in restaurant concepts for the art fair. During this project we got inspired in conceptualizing a healthy bowl establishment and we started to brainstorm all the healthy ingredients Mayans love to use and a dream came true when somebody at the fair told us about a location we could use to make a small restaurant.
We knew we wanted the name “bowls” on the name of the establishment and after putting our names along with the name “bowls” we realized none of them fitted quite properly and after we heard the name “Guadalupe” we knew it was the one that fitted the best to the concept. We knew the name carried a lot of weight by signifying the mom figure for a Mexican so we really had to make we delivered our values.
There are so many misconceptions. One of the big ones is that you can’t get enough protein on a vegan or vegetarian diet. But there are so many beans, legumes,nuts and vegetable proteins that are available and beneficial. Being Vegetarian or vegan no longer means a boring diet of tofu steamed veggies.
- Our famous Jungle bowl, this nutritious bowl is made with lentils and quinoa as the base. Then we add lettuce with our house extra virgin olive oil and vinegar dressing, pico de gallo, chopped parsley, plantain, avocado over our secret cashew based chipotle sauce. It’s a great dish after a beach day or long bike ride along the Tulum beach road. Filling, energizing and nutritious!
- Our Tulum Smoothie: this refreshing beverage is made with superfoods like the Peruvian Maca, unsweetened coconut milk, local vanilla, chia, oats and banana. It tastes just like a vanilla cookie without any of the guilt.
- Our newly launched Guada burger, was recently added to our menu It’s so delicious, we can’t wait for you to try it. It consists on a pink beet bun, cheddar cheese, homemade aioli, Beyond bacon and burger patty along with a side of camote fries. It’s a hearty, healthful meal after a long day of exploring the Mayan jungle.
Everybody that supported our ideas since day #1 and that told us to go for it, especially Alexandra’s mom, Carolina, who had the tenacity and vigor to assist us with all the government and licensing appointments that are necessary to open a restaurant in Mexico.
There is so much more access these days to information about veganism and vegetarianism. Everything from information on social awareness, environmental impact, and even countless delicious recipes online. There are amazing networks that supports and encourage the success of someone interested in changing their diets. Covid-19 has also brought up concerns over the effect of animal foods on our health, and the risk that intensive farming poses with future pandemics.
