Cauliflower and sweet potato vegan meatballs with tofu mayo

These vegan meatballs will conquer your taste. They are full of nutrients, but very healthy; even the tofu mayo contains very few fats.
Ingredients
For vegan meatballs
- -150g steamed cauloflower;
- -1 medium steamed sweet potato;
- -50g chickpeas flour;
- -30g greated bread;
- -1 tablespoon extra virgin olive oil;
- -salt, pepper as you like.
- -50g sugar-free cornflakes for the breading.
For Tofu Mayo:
- -200g tofu;
- -1 tablespoon umeboshi acid or 2 pinches of salt;
- -40ml sésame oil;
- -30ml Apple vinegar or lemon juice;
- -50ml still water;
- -a pinch of turmeric (optional).
Instructions
- Put all of the ingredients, except the greated bread, in a bowl and blend it. You can also use a kitchen mixer.
- Then add the greated bread, mix with the dough and after getting your hands wet, create your vegan meatballs. You can make them rest into the fridge for about half an hour, in order to make them more compact.
- In the meantime, take 50g sugar-free cornflakes and make them into crumbs in a bowl, in order to get your breading soak each meatball into some soy milk, and them into the crumbs of cornflakes.
- Cook into air fryer for 15 minutes, 180 Celsius degrees.
- Chop your tofu and put it with all of the ingredients required into a cylindrical shape container and blend it all with a minipimer.
- You will get a smooth and delicious cream similar to a mayonese, but utterly less fat and more protein.
