Cha Soba Salad

This is one of our favourite homecooked salad. It is quick and easy to cook, refreshing with strong unami taste. Great for hot day!
Ingredients
- 100g Cha Soba Noodles
- ½ Carrot (thinly sliced)
- ½ cup Edamame
- ½ pack Shimeji Mushroom
- ½ cup Mushroom-based Meat Replacement
- 1 tsp White Sesame Seed
Instructions
- Prepare the sauce first by mixing all the ingredients together in a glass container. Cover and chill it in the fridge for at least 30min.
- Cook the cha soba according to instructions. Rinse it with ice water and set aside.
- Blanch the edamame and shimeji mushroom.
- Pan fry the mushroom-based meat replacement.
- Place the cha soba on the serving bowl, followed by meat replacement, shimeji, edamame and carrot. Then sprinkle some sesame seeds on the cha soba.
- Pour the cold sauce over salad and mix well before eating. Enjoy!
