Cha Soba Salad

This is one of our favourite homecooked salad. It is quick and easy to cook, refreshing with strong unami taste. Great for hot day!  

Ingredients

  • 100g Cha Soba Noodles
  • ½ Carrot (thinly sliced)
  • ½ cup Edamame
  • ½ pack Shimeji Mushroom
  • ½ cup Mushroom-based Meat Replacement
  • 1 tsp White Sesame Seed

Instructions

  1. Prepare the sauce first by mixing all the ingredients together in a glass container. Cover and chill it in the fridge for at least 30min.
  2. Cook the cha soba according to instructions. Rinse it with ice water and set aside.
  3. Blanch the edamame and shimeji mushroom.
  4. Pan fry the mushroom-based meat replacement.
  5. Place the cha soba on the serving bowl, followed by meat replacement, shimeji, edamame and carrot. Then sprinkle some sesame seeds on the cha soba.
  6. Pour the cold sauce over salad and mix well before eating. Enjoy!
