Kimberley is a mother of two humans and two dogs, a Chemistry student and, of course, an animal lover. She frequently shares her favorite vegan recipes to make at home, and to help people eat healthy and vegan.

Meatless Movement recently had a chat with her.

Easy, healthy, vegan meals and recipes

I haven’t really found it challenging to find vegan food, especially in supermarkets as there is lots of choice. It would be nice if more restaurants had vegan options but there are plenty that do so I just stick to the ones I know.

I feel that going vegan was a great decision in terms of morality (for the animals), for my health and for the planet. I wish I had gone vegan sooner.

Do it gradually if it is difficult. The point is not to be perfect but to be better

Kimberley

If it is difficult, do it gradually. Make some easy swaps such as soya milk or vegan burgers. If you can find a substitute for your favourite meals then it will seem easier. Also remember that just because one vegan cheese (for example) tastes bad, it doesn’t mean they all do.

Some vegan products are awful but some are amazing, same as with animal products – so you can’t judge something as tasting bad because it’s vegan, it tastes bad because it hasn’t been cooked very well.

Vegan myths, debunked

  • ‘Tasteless’ – you are trying the wrong brands. I recommend violife original cheese.
  • ‘Nutrient-deficient’ – a plant based diet can be healthier than eating meat if it is done right. There are vegan sources of ALL of the nutrients that the body needs. Take multivitamins and minerals along with omega 3 (there are vegan ones). There are nutrient powders available as well such as spirulina and isolated protein. Choose tempeh as a lean protein source.
