Tell us about yourself please

My name is Anna Marie. I am Sicilian American. I live on the east coast. I enjoy gardening. Spending time with family and friends. I love the beach and to be outdoors and one with nature.

I have a three year old daughter that I am also raising plant based. She loves eating healthy. I think it’s so important to teach children healthy eating habits at a young age.

I started off as a vegetarian to cut down on meat prior to going full vegan. I wanted to start a page to share my healing journey and help inspire others to do so also. Eyestayhealing means i am healing and I will continue to heal, mind body and soul.

Gremolata is an Italian herb mixture of parsley, lemon, salt and garlic. Such a great addition to these carrots.

Zaalouk is a Moroccan dip of slow sautéed eggplant, tomatoes, aromatics, spices and fresh herbs.

You don’t need to flavor a dead animal.

I started going meatless because I wanted to be more alkaline and improve my health, but I am also vegan for the animals, and the world. I have been vegan for a couple years.

I like to cook my own meals because I can make a spin on many different ethnic dishes and turn them vegan. I enjoy using fresh ingredients, herbs and spices. Dining out I usually find restaurants with vegan options. Sometimes I can tweak the menu to get something vegan when nothing is available. Being vegan is fairly easy for me, going meatless wasn’t that hard. I have always loved fruits and vegetables. I enjoy cooking and creating dishes. I don’t miss meat.

I think people should realize that you can make anything taste delicious. You don’t need to flavor a dead animal. We have so many different kinds of plants on this earth that gives us all the sustainability that we need. There are tons of plant based proteins. My advice to anyone wanting to go vegan is to slowly cut out animal products. Plan ahead of time and meal prep. Find vegan recipes and try them at home. You will feel so much better and vibrate higher.
