Hi there, I’m Zoe from Cyprus and I’ve been living here for quite some time now. I’ve been on a meatless diet for 7 years and have been vegan for 5 years. My decision to adopt a vegan lifestyle was driven by my deep respect for the lives of all creatures.

I believe that every living being deserves to be treated with kindness and compassion, and that extends to the food choices I make. By going vegan, I’m doing my part to minimize harm to animals and the environment. It’s been a journey, but I feel more energized and healthier than ever before.

As a vegan, I used to cook large meals with many ingredients, often including fried and sugary foods. However, as I began to experiment with veganizing traditional non-vegan meals, my passion for cooking grew. I started sharing my creations on social media pages I created on Facebook and Instagram, and eventually began taking courses on vegan nutrition coaching. Through my studies, I learned that simple meals are often more nutritious and better absorbed by the body.

In the past, finding vegan options at restaurants was often a challenge. It was common to search through menus for extended periods of time, only to find limited options like salads and fries. There was also confusion between vegetarian and vegan options, with some places claiming to offer vegan food, but only having vegetarian options available. However, nowadays, things have improved significantly. Most restaurants have added vegan meals to their menus, with only a few still struggling to differentiate between vegetarian and vegan options.

In addition to restaurants, vegan options can also be found at cafeterias, rotisseries, bakeries, patisseries, and supermarkets. While this abundance of vegan options is a positive development, there is a concern that some businesses are simply capitalizing on the trend and not fully understanding the philosophy behind veganism. It’s important for businesses to not only offer vegan options but to also respect the values and perspectives of the vegan community.

As more people adopt a vegan lifestyle, it’s essential for businesses to have a deeper understanding of the principles of veganism and to provide a wide range of tasty, well-thought-out vegan options. It’s not your typical cake – it’s a satisfying meal in and of itself, while still being incredibly sweet and delicious.

Marina’s commitment to using wholesome ingredients makes her desserts stand out from the rest. If you’re in the Limassol area and looking for a guilt-free indulgence, En Healthy is definitely the place to be.
