Vegan chickpea flatbread with zucchini

Hi! This is a healthy vegan flatbread who originates from North Italy, Liguria. It is named "farinata". It is made of chickpeas flour. It is low carb and full of proteins and amazing taste.

Ingredients

  • 150g chickpeas flour;
  • 450 ml still water;
  • 2 tbs extra virgin olive oil;
  • 2g salt;
  • 30g nutritional yeast;
  • parsley and pepper (optional);
  • 3 zucchini to be sliced very thin;

Instructions

Mix the liquid ingredients with salt, then add chickpeas flour and mix it carefully into the water in order to get a smooth dough.

Add the veggies into the dough and mix it all. Spoil into a baking tray for pizza, previously covered with baking paper and bake at 180 degrees for 20minutes into the medium case of the oven. Once 20min are passed, move the tray at the top and bake for 5 minutes more. Hold on some minutes before cutting, and then enjoy!
