Veronica is a super simple and fun person. She has always enjoyed cooking, but above all to eat rich and different. Years ago she came to believe that no one could be interested in her food because it was not the most common, until she started using Tiktok and then saw thousands of people interested in what she does. Meatless Movement recently had a chat with her.

Veronica told Meatless Movement that she loves sharing her recipes, and that she welcomes anyone in making the kitchen a fun laboratory where all can prepare the most delicious recipes.

All her recipes are simple, rich and you can prepare them any day.

This is life; it is the art of living, as sweet as cotton candy

I turned ovo-lacto vegetarian 23 years ago because I felt compassion, respect and love for all living beings, later on I understood I was not doing as much as I could and I turned vegan almost 12 years ago.

I have been very lucky that several years after I turned ovo-lacto vegetarian my sister did the same, and some time after that we got together and starting talking about dairy farms, that day we decides to start the process of going vegan.

Eating rich is a pleasure that we can all give ourselves

Veronica

I’ve always kept an open mind when eating out. They is always a vegan option you just have to find it, or let them know how to do it. I check the appetizers (like guacamole, mushrooms, grilled veggies, hummus), I then check the salads, even if no salad is vegan appropriate you can always ask to have the non suitable items removed. Last I check for side dishes, corn, broccoli, fries, etc. Just don’t be picky and you’ll find an option everywhere.

I feel happy and proud of myself for standing up and being loyal to my feelings toward non-human animals. I also feel very light weighted both physically and energetically and i believe this has much to do with being a vegan, I feel very light because I know I am doing my best effort to stay in peace with all living beings.

If you are still hesitating, just give it a chance, it’s the same but without guilt. It’s just a matter of getting used to, you can have almost the same flavor and definitely the same satisfaction in eating vegan food. Be patient, get as much information as you can, don’t torture yourself if you make a mistake. Veganism is about doing our best it not perfect and it’s a process not a competition.

Happy trying delicious recipes that I want to share with you

Veronica

I recommend my recipes, you can watch most of the on my tiktok Veritogutz and you can check my website for my Sandwich course. Here in Monterrey my favorite restaurant is called Vida Atemporal, you definitely need to try the cauliflower wings and the Birria and Baja tacos.

Gifts that fill my soul and my heart… thank you

Most persons I know believe veganism is just about food and that we do it for the Good of our own personal health, they are not aware veganism is an ethical posture. I always explain patiently and if I see a negative attitude I’ll just smile and let it go. Some persons are willing to listen and its worth my time to explain that veganism is not about humans and its much more than a diet, its a posture that reject all animal suffering and exploitation and that in my case i went vegan trying to be consistent with my ethical believes but know I can affirm that I also been very benefited from this change and it has been the best decision ever.

A while ago a got Covid for the second time, and even though the Covid numbers where extra high in my city people still commented things like, “maybe it because you need meat” and I’m thinking “what about the thousands of persons who eat meat and get COVID, what’s their excuse” LOL. I just find it funny how a plant based diets is the blame for everything that may happen to me.
