Pesto pizza with sundried tomatoes, olives, toasted almonds and basil

Pizza is always a good and very delicious idea! And this combo of toppings is one of my favorites.

Ingredients

Pizza base for 3-4 people:

  • 500 g flour
  • 250 ml water
  • 10 g dried yeast
  • 3 tbsp olive oil
  • pinch of salt

Pizza toppings:

  • 150 ml passata (tomato sauce)
  • 1 tsp oregano
  • 100 g sundried tomatoes
  • 70 g vegan pesto
  • 70 g olives
  • 30 g almonds
  • a handful of basil leaves
  • salt

Instructions

  1. In a bowl, mix the flower, dried yeast and salt. Then add the lukewarm water and the olive oil. Knead the mixture until it forms a dough.
  2. Transfer the dough to a lightly oiled bowl and cover it with a kitchen towel. Let the dough rise for about an hour. It works best, when you put the bowl in a warm place.
  3. When the dough has risen, divide it in two pieces and flatten them as much as you can. Put the rolled out pizzas onto  two lined baking trays.
  4. Preheat the oven to 240°.
  5. For the pizza sauce, mix the passata with oregano and salt to taste. Spread the sauce onto your pizza base.
  6. Add small spoonfuls of pesto, chopped sundried tomatoes and olives.
  7. Bake the pizzas for about 10-12 minutes.
  8. Meanwhile, chop some almonds and toast them in a pan.
  9. Once the pizzas are done, put them out of the oven, add the toasted almonds and some fresh basil.
