Mint-Choco Raw Detox Cupcakes

Ingredients

FOR THE CRUST

  • 1 cup nuts (walnuts, hazelnuts and/or almonds)
  • 6 dates
  • 1-2 Tbsp or raw cacao
  • A pinch of salt

FOR THE MINT LAYER:

  • 2 cups of cashews
  • ½ cup raw coconut oil
  • ½ cup agave or maple syrup
  • 3 Tbsp lemon juice
  • ½ cup fresh mint leafs (or add peppermint cooking oil to taste)
  • 20 drops of mint chlorophyll (for the green and detox effect or sub for green food colouring)

FOR THE TOPPINGS (optional):

  • Fresh mint leafs
  • Dark chocolate

Instructions

  1. Add all the crust ingredients to a food processor (if the dates are too hard for your food processor or blender feel free to soak in water overnight or an hour before cooking)
  2. Place the blend at the base of cupcake holders
  3. Blend all the mint layer ingredients (if the cashews are too hard for your food processor or blender feel free to soak in water overnight or an hour before cooking)
  4. Add on top of the crust on the cupcake holders
  5. Keep in the fridge or freezer for 1 hour
  6. Add any optional toppings and enjoy! 🙂
