Assam Laksa is our kind of comfort food, especially on cold days. We like how appetising and flavourful it is, umami with hint of tangy sour. Here is my simple recipe that you can easily cook at home for 2 persons.
Ingredients
Broth:
- 2 tbsp Assam Laksa Paste
- 2 slices Galangal
- 1 Chili Padi
- 1 stalk Lemongrass
- 600ml Water
Garnish:
- 4 slices Vegan Fish
- ½ Cucumber (thinly sliced)
- ¼ Pineapple (thinly sliced)
- 1 big Chilli (thinly sliced)
- A handful Mint Leaves
- 420g Laksa Noodles (cooked)
Instructions
- Add all the ingredients for broth into pot to boil. Simmer for another 30min after it starts to boil.
- Put the Laksa Noodles on the serving bowl, top with garnishes and pour in the broth. Serve immediately.
