Curried Potato with Vegan Luncheon

Simple stir fry Potato with Vegan Luncheon Meat with a twist, using curry leaves and curry powder, a fusion between Chinese and Indian food. It is easy to cook and taste really flavorful!
Ingredients
- Curry Leaves - ½ cup
- Vegan Luncheon Meat (diced) - 2 slices
- 1 big Potato (diced)
- Curry Powder - 2 tbsp
- Salt - 1 tsp
- Water - 500ml
Instructions
- Boil a pot of Water with Salt. And add in Potatoes to boil for 3min.
- Heat up the frying pan with Cooking Oil and fry the Luncheon Meat until fragrant. Remove and set aside.
- Add more Cooking Oil to the Frying pan and stir fry the Potatoes until it is browned with Curry Leaves.
- Add in the Luncheon Meat and slowly stir in Curry Powder.
Fry for a minute to mix well.
