Curried Potato with Vegan Luncheon

Simple stir fry Potato with Vegan Luncheon Meat with a twist, using curry leaves and curry powder, a fusion between Chinese and Indian food. It is easy to cook and taste really flavorful!

Ingredients

  • Curry Leaves - ½ cup
  • Vegan Luncheon Meat (diced) - 2 slices
  • 1 big Potato (diced)
  • Curry Powder - 2 tbsp
  • Salt - 1 tsp
  • Water - 500ml

Instructions

  1. Boil a pot of Water with Salt. And add in Potatoes to boil for 3min.
  2. Heat up the frying pan with Cooking Oil and fry the Luncheon Meat until fragrant. Remove and set aside.
  3. Add more Cooking Oil to the Frying pan and stir fry the Potatoes until it is browned with Curry Leaves.
  4. Add in the Luncheon Meat and slowly stir in Curry Powder.
    Fry for a minute to mix well.
