Easy Vegan Curry for Roti Prata

We love having prata with curry for breakfast. Tried cooking curry with oat milk, it is spicy with a rich aromatic flavour yet so light on the tummy. Love it! 😋
Ingredients
- 2 tbsp Vegan Curry Paste
- 1 cup Oat MIlk
- ½ Brinjal (cut into cubes)
- ½ Tomato (cut into cubes)
- 6 Vegetarian Mutton
- 1 tsp Olive Oil
- 2 Roti Prata (fried)
Instructions
- Heat up olive oil on a frying pan and add the curry pasta. Fry until fragrant.
- Add mutton and brinjal, followed by tomato. Stir fry to combine.
- Pour in the oat milk. Mix well and bring the mixture to boil. (Concurrently, fry the roti prata.)
- Serve while hot with roti prata.
