She told Meatless Movement that if you think vegan food is boring, fear no more. Vegan food is flavorful and good for the soul. You don’t have to eat lettuce again.

Hi everyone! My name is Mina and I am a vegan chef from Barcelona who is passionate about animal well-being and sustainable food choices. Growing up, I had a traumatic experience seeing first-hand my grandma raise animals for consumption. This led me to reduce my animal product consumption until seven years ago when I went vegan and decided to make it my mission to create and veganize dishes from around the world.

It’s been almost 7 years since I decided to go vegan… I remember the moment when my mind just clicked… suddenly, I could not see any animal products without having their fearful eyes in my mind, sad and waiting for their horrible fate. I could feel like I was right there with them, in a slaughterhouse.

Taiwanese Be’ef Rolls – 🌯 made w/ @nextmeats_usa . You can make a big batch of scallion pancakes and freeze it. Just separate each other with parchment paper 💁🏻‍♀️.

Ingredients

  • 2 cups all purpose flour
  • 1 ½ teaspoons kosher salt
  • ¾ cups hot water, plus extra if needed
  • 3 tablespoons oil
  • Bunch of sliced green onions
  • 1 lb vegan beef
  • ¼ cup soy sauce
  • 1 tbsp dark soy sauce
  • 2 onions halved
  • 2 tablespoons hoisin sauce
  • 2 tablespoons shaoxing wine
  • 2 tsp sugar
  • 2 cloves of garlic, minced
  • 1 inch piece of ginger sliced
  • 4 star anise
  • ¼ teaspoon five spice powder
  • 2 cups thinly sliced cilantro
  • 2 cups thinly sliced lettuce

Instructions

    1. In a large bowl, combine the flour, and salt. Gradually add the warm water and vegetable oil, stirring until a dough forms. Knead the dough for about 8 minutes, or until it becomes smooth and elastic. Cover the dough and let it rise for about 30 minutes.
    2. While the dough is rising, cook the vegan meat in a pan by combining the soy sauce, onions,hoisin sauce, shaoxing wine, sugar, garlic, ginger, and five spice powder for about 10 min.
    3. Divide the dough into 2 equal pieces. Roll each piece into a thin circle about 12 inch in diameter.
    4. Heat a skillet or griddle over medium-high heat. Cook the dough circles for about 1-2 minutes per side, or until puffed and lightly browned.
    5. To assemble the be’ef rolls, place a cooked dough circle on a plate. Add a small amount of housing sauce, cooked beef, green onions, cilantro, and lettuce on one side of the dough.
    6. Roll the dough around the filling, tucking in the sides as you roll to make a neat package.
    7. Repeat the process with the remaining dough and filling.
    8. Serve the be’ef rolls warm and enjoy them with additional hoisin sauce or chili paste if desired.

~ Abuelita Style 👵🏻 ~ This dish really brings me all kinds of happy memories from my childhood. I remember how my whole family would get together on Saturday night, chatting and sharing delicious food made mainly by my 👵🏻. Patatas bravas are a staple in every Spanish household. It’s a cheap dish to make and made to share (or not 🙈).

Ingredients

  • 2 lbs Kennebec potatoes peeled
  • ½ cup of olive oil
  • 2 tbsp smoked sweet paprika
  • 1 tbsp or more of spicy paprika
  • 3 tbsp tomato paste
  • Pinch of sugar
  • Salt to taste
  • 1½ cups of vegetable broth
  • 1 tbsp of white vinegar
  • Cornstarch slurry
  • Garlic alioli (recipe available on my feed).
  • Enough oil to fry the potatoes

Instructions

Make sure you keep your fire medium low while making the sauce. The paprika can easily get bitter if burned.

Taiwanese Be’ef Noodle Soup

. I used the recipe from @buzzfeedtasty but made it more intense since I didn’t use beef 🤗 (basically just added extra rice wine and soy sauce).

Ingredients

  • 6 qt water, plus more as needed
  • 6 scallions, halved crosswise
  • 8 slices fresh ginger
  • 6 pods star anise
  • 1/4 cup vegetable oil
  • 6 cloves garlic
  • 2 red chiles, halved lengthwise
  • 1 medium white onion, sliced
  • 2 tbsp brown sugar
  • 3 tablespoons spicy bean paste
  • 3/4 cup abc soy sauce
  • ½ cup rice wine
  • ½ cup light soy sauce
  • 2 medium tomatoes, chopped
  • 1 teaspoon white pepper
  • 2 dried bay leaf
  • Juicy marbles tenderloin cut in thick slices (microwave it after defrosted for 1 min to keep the shape while cooking it later)

Instructions

    1. In a wok pour in the vegetable oil and add the scallions ginger slices, the garlic, red chiles, star anise pods, the onion, brown sugar, and spicy bean paste. Cook until the onions start to become translucent.
    2. Add the juicy marbles thick slices
    3. Add the dark soy sauce, then add the rice wine.
    4. Pour in the light soy sauce, then add the tomatoes. Stir fry for 8-10 minutes.
    5. In a large pot, Fill a large pot with water and heat over medium-high heat. Add the stir-fried meat, vegetables, and cooking liquid.
    6. Add the white pepper, salt, and bay leaves. Remove carefully the meat after cooking it in the broth for 5 min.
    7. Serve with your noodles and bok choy
    8. Add salt to taste

Vegan Tuna 🐟- Perfect for sandwiches and salads 😋. High in protein and also in Omega 3, 6 & 9.
Just with a few ingredients:

Ingredients

  • 60 gr of dry pea protein
  • 1 tsp of dulse seaweed
  • 1 tsp of kombu powder
  • 1 tsp of Tamari or soy sauce
  • ½ tsp of vegan fish sauce (optional)
  • about 2- 3 tbsp of flaxseed oil
  • enough olive oil to cover the tuna

Instructions

I added hot water to the pea protein until soft.
Then squeeze out the water.
Mix all the ingredients except the oils.
Place it in a mason jar.
Added the oils and mix.
It has been over a week and it is still good.

Ingredients

  • 1 can of legumes
  • 2 tbsp of cornstarch
  • Onions
  • Pepper

Sauce -The sauce has 1/2 cup of water (hot it mixes better)

  • 2 tablespoons of sugar
  • 3 tablespoons of ketchup
  • ¼ cup of hoisin
  • 1 tbsp of soy sauce
  • 3 tbsp of vegan oyster sauce (I use one made of mushrooms)
  • 2 tbsp of apple cider vinegar
  • 2 tbsp of sweet chili sauce (the one for spring rolls works).

Instructions

    Well, you start with the vegan meat of your choice。
    -Add the liquid from a can of legumes and 2 tablespoons of cornstarch
    -Mix it and leave the meat to marinate. Discard the marinate and add more cornstarch (about 1 tbs more) to the meat.
    -Fry it in some oil (if you deep fry, it is much better)。
    -Sauté the pepper and onion first and then the garlic with a little of the oil from the meat

    Transfer the sauce to a wok and let it reduce for a couple of minutes, then add the vegetables and the meat. Garnish with green onion
