Truffle Cheese Mashed Potato 🌿Vegetarian, Alliums free
Happened to have fresh parsley so decided to make mashed potatoes for an impromptu lunch gathering at our neighbour's home. It is rich and creamy with a nice earthly taste from truffle and parsley. Here is my simple recipe.
Ingredients
- 🌱 500g White Potatoes (boiled in salt water)
- 🌱 ¼ cup Parmesan Cheese
- 🌱 4 tbsp Truffle Oil
- 🌱 1 stalk Fresh Parsley (finely chopped)
- 🌱 Few dashes Black Peppercorn (grinded)
- 🌱 1 tsp Sea Salt
Instructions
- Mashed the boiled potatoes while it is still hot.
- Season with sea salt and black peppercorn. Mix well.
- Stir in parmesan cheese, followed by fresh Parsley.
- Finally drizzle with truffle oil. Mix and mash until creamy and fluffy. Serve hot or at room temperature.
