Blueberry and Butternut Squash Loaf

So delicious and full of healthy ingredients, the Blueberry and Butternut Squash Loaf is definitely something to try!

Ingredients

  • 2 cups all-purpose flour
  • 1 packet (2 tbsp) baking powder
  • ½ tsp baking soda
  • 1 packet vanilla sugar
  • Pinch of salt
  • 1 tsp cinammon
  • 80g brown sugar
  • 1 tbsp carob extract
  • ½ cup butternut squash puree
  • 50 ml coconut oil
  • 1 tbsp apple cider vinegar
  • ½ almond mylk

Instructions

  • Use a hand blender to incorporate all of the ingredients. Then gently mix in a generous handful or two of blueberries.
  • Transfer the dough into a greased loaf baking pan and sprinkle some more blueberries and some vegan chocolate chips on top.
  • Bake at 180°C for approximately 50 – 60 min.
  • Allow for the loaf to cool and enjoy.

Notes

Note: Depending on ur flour, if the dough seems a little hard, u may want to add 1/2 small banana.
