Blueberry and Butternut Squash Loaf

So delicious and full of healthy ingredients, the Blueberry and Butternut Squash Loaf is definitely something to try!
Ingredients
- 2 cups all-purpose flour
- 1 packet (2 tbsp) baking powder
- ½ tsp baking soda
- 1 packet vanilla sugar
- Pinch of salt
- 1 tsp cinammon
- 80g brown sugar
- 1 tbsp carob extract
- ½ cup butternut squash puree
- 50 ml coconut oil
- 1 tbsp apple cider vinegar
- ½ almond mylk
Instructions
- Use a hand blender to incorporate all of the ingredients. Then gently mix in a generous handful or two of blueberries.
- Transfer the dough into a greased loaf baking pan and sprinkle some more blueberries and some vegan chocolate chips on top.
- Bake at 180°C for approximately 50 – 60 min.
- Allow for the loaf to cool and enjoy.
Notes
Note: Depending on ur flour, if the dough seems a little hard, u may want to add 1/2 small banana.
