Have you heard of cauliflower steak before? Well if not …you should try this recipe, this is completely delicious and a fantastic way to celebrate the versatile vegetable that cauliflower is. I know, I know they are nothing like a real steak, but there is something about cutting cauliflower into large slabs and roasting it with flavourful spices.

A cauliflower “steak” is simply a head of cauliflower that is cut into larger slabs, instead of smaller florets, and yes, looks more impressive on a plate.

This recipe is the perfect comforting meal. Whether you’re making it for a special occasion or ….OK let's be honest here, you don't need that "perfect" occasion to make this recipe, it’s a delicious option for everyone and for every occasion.

I love that you can get creative with this recipe, You can add cumin, coriander, cayenne pepper, curry powder, turmeric, garam masala, Cajun seasoning, parsley, oregano, thyme, basil, or rosemary would also be a good option, but you can actually use any ingredients you have on hand.

Ingredients

  • 1 large head cauliflower
  • extra-virgin olive oil, as needed for greasing the baking sheet
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon sumac
  • 2 teaspoons nutritional yeast
  • 1 teaspoon fine sea salt
  • 2 tablespoons crushed walnuts (optional)
  • parsley
  • lemon (optional)

Instructions

  1. Preheat the oven to 180C and grease a baking sheet with olive oil.
  2. Cut the cauliflower into slabs, right through the centre of the stem, place the cauliflower steaks on the baking sheet and drizzled each stake with olive oil, this process prevents the cauliflower from sticking to the baking sheet. Also helps to create a beautiful golden and crisp surface, the exterior becomes golden brown with crisp edges, to be honest it’s a beautiful contrast of textures and flavours.
  3. In a small bowl mix together salt, pepper, garlic powder, nutritional yeast, sumac and paprika and sprinkle the seasoning mixture on both sides of the cauliflower steaks, about ¼ teaspoon per side.
  4. Place the pan in the oven for the cauliflower to roast for 15 minutes, then carefully use a spatula to flip each steak, then cook for another 10-15 minutes until fork-tender.
  5. It’s done when they are golden on both sides, tender and a bit crisp, the centre stem should be easily pierced by a fork
