Easy Curry with Roti Prata recipe

Easy Vegan Curry for Roti Prata

We love having prata with curry for breakfast. Tried cooking curry with oat milk, it is spicy with a rich aromatic flavour yet so light on the tummy. Love it! 😋

Ingredients

  • 2 tbsp Vegan Curry Paste
  • 1 cup Oat MIlk
  • ½ Brinjal (cut into cubes)
  • ½ Tomato (cut into cubes)
  • 6 Vegetarian Mutton
  • 1 tsp Olive Oil
  • 2 Roti Prata (fried)

Instructions

    1. Heat up olive oil on a frying pan and add the curry pasta. Fry until fragrant.
    2. Add mutton and brinjal, followed by tomato. Stir fry to combine.
    3. Pour in the oat milk. Mix well and bring the mixture to boil. (Concurrently, fry the roti prata.)
    4. Serve while hot with roti prata.
